Avocado Chicken Salad - No Mayo & Dairy Free

I was in the mood for a hearty sandwich and did a quick survey of what I had on hand in my kitchen. I had some ripe avocados and some chicken thighs in the freezer, so thought I would try to make a quick avocado chicken salad. I'm a big fan of the tuna salad or egg salad options on those sandwich trays you find during the "lunch and learn" type work events... I normally reach for those over the cold cut or roast beef sandwiches, so thought I might as well make something like that at home :)

I didn't want to add any mayo (not a huge mayo lover), so I threw in some hard boiled eggs to give it a lil more creaminess. The avocado was already a great substitute for the mayo anyways. I also added in some minced red onions for some crunch and a sprinkle of crushed red peppers for some spice! And let me tell you, it turned out really delicious and very filling - oh and this batch can feed a crowd! Perfect for all those school and work packed lunches :)

Aside from using avocados (how hipster!!) the other trendy thing to mention here is that this recipe is diary free and mayo free, so it's a great option for those who are looking for a hearty, creamy chicken salad without the dairy.

And of course there are a variety of ways you can serve this, but since I'm basic I ate it as basic as "basicallycooking" can get - and that is in between two pieces of whole wheat toast lol. But you can serve it as a topping on a garden salad, in a pita or maybe as part of a grilled cheese sandwich - that would be amazingly delicious as well ...the choice is yours :)

Avocado Chicken Salad

Serves 6

1 C of shredded cooked chicken (see my note below!)

2 ripe avocados, lightly smashed

3 hard boiled eggs, lightly smashed

1/2 C minced red onions

1 tsp red pepper flakes

pinch of salt and pepper

Note: I just boiled some chicken thighs until cooked through and shredded them with a fork and my hands.

1. In a large bowl, mix together the chicken, avocado, eggs, red onions and red pepper flakes. Add in the salt and pepper and mix until everything is combined. That's it :) Serve as a sandwich, in a wrap, atop a salad, etc. etc.! Time to serve, devour and enjoy <3
