Oatmeal Chocolate Chip Muffins - Hearty grab and go breakkie

Oatmeal Chocolate Chip Muffins

Makes 12 large muffins

1 1/2 cups oats

2 and 2/3 cups all-purpose flour

2/3 cup sugar

4 teaspoons baking powder

1/2 teaspoon salt

2 eggs, beaten

1 1/2 cups almond milk

1/2 cup olive oil

1 C semi-sweet milk chocolate chips

- Combine the dry ingredients in a large bowl: oats, flour, sugar, baking powder, and salt. In a separate bowl mix together the wet ingredients: eggs, almond milk, and oil.

- Add the wet ingredients into the flour mixture and stir together until moistened. Mix in the chocolate chips

- Using a 1/3 C measuring cup, fill the paper-lined muffin tins with the batter. Bake at 400 degrees for 20 - 24 minutes, to test: poke the center of a muffin with a knife and if it comes out clean then the muffins are done. To give the tops more color, set the oven to broil and broil them muffins for another 1 - 2 minutes, or until golden. Take out of oven and let cool for 15 - 30 minutes, then serve, devour & enjoy! These make for great snacks to pack along with your lunch!
