I'm lucky to live in an area with a ton of ethnic and multicultural restaurant and cafes (yay the Greater Toronto Area!) so my bf and I like to try out different cafes and restaurants around the area. I've been noticing a "new" (well it's new to me!) dessert trend recently. At a lot of Japanese and Taiwanese inspired restaurants, I've been seeing a lot of decadent desserts which are basically piled up pieces of toast, covered in dessert sauces (chocolate, vanilla, etc.), ice cream and other toppings like fresh fruit or nuts. They are known as "honey toast" or "brick toast" desserts and they are beautifully presented and taste AMAZING!!! It kind of reminds me of a waffle or crepe dish you would normally find at more traditional dessert cafes, but possibly even BETTER! So after eating one at a local cafe, I figured that I could probably try to recreate this at home and put my own spin on it.
I saw a recent post about different smores inspired recipes (you can check it out here: Smores fire pit desserts) and thought that a smores honey toast dessert would be a delightful mash up!
It's a pretty simple process to create this glorious dessert that's perfect for sharing with a bunch of friends! It's sure to impress at your next backyard BBQ or summer event :) I am so excited to share this with you all and I'm going to try making different variations throughout the summer! strawberries? green tea ice cream? coconut? mango's? The options are endless & I hope this inspires some new honey toast recipes for you home cooks out there :)

May I introduce to you, the smores honey toast! :D
I couldn't wait to dig in!!!
Smores Honey Toast
1/2 a loaf of brioche bread
1/4 C butter
1/4 C honey
2 C mini marshmallows
2 tbsp chocolate sauce
3 scoops of vanilla ice cream
2 tbsp Nutella
1/4 C of crushed graham crumbs
1. Pre-heat your oven to 350 degrees F. In the meantime, cut 1 inch thick pieces of brioche and lay them on an oiled baking sheet. Spread butter on both sides of the toast slices. Using a kitchen brush, spread a layer of honey on the side of the toast that is face up. Once the oven has reached 350, bake the pieces of bread for 10 minutes, flipping after 5 minutes and brushing with honey on the other side. Once done toasting, cut each slice into three strips.
2.On a well oiled baking sheet, place a layer of mini marshmallows and then put into oven. Set your oven on broil and broil for 1-2 minutes. Try to get some toasty brown spots on the marshmallows but stay close! You don't want your marshmallows to burn! Once done toasting, remove from oven and get ready to assemble the honey toast.
3. In a small microwaveable bowl, melt the chocolate and nutella in a microwave for about 20 seconds, or until the chocolate sauce is runny enough to be drizzled over the dessert.
3. Assemble the smores honey toast! Layer 4 strips on the bottom, 2 strips on the next layer, 2 strips on the third layer and then 1 strip on the top of the pile! Add 3 scoops of vanilla around the toast pieces, I put one on the very top and 1 on each side of the toast pile. Then scoop up some of the toasted marshmallows and layer around the toast pieces. Finish it off with a drizzle of the chocolate & nutella sauce and dusting of graham cracker crumbs! And there you have it, your home made smores honey toast!!! Ready to serve, devour & enjoy!!!
