Chili con carne

Everyone needs a go-to chili recipe right? Especially at this time of the year when the temperature is falling and all you want to do is hibernate inside! So I'm sharing a version of chili con carne that I've been making for years! It is beyondddd easy to make (I use taco seasoning! lol) but is pretty much fool-proof and is perfect for feeding a crowd :) My mom normally requests that I bring this dish to our many family potluck's and it's a fan fave!

I think that a good bowl of chili should be spicy and chunky - with lots of beef, beans and veggies in every spoonful! I keep the ingredients pretty simple, with jalapeños, tomato, onion and red peppers for the veg. Then I take canned kidney beans, tomato sauce and ground beef and essentially let it all stew together with the seasoning.

Chili con carne

Serves 8

(Note: When I make this for a large crowd, I just double up on the ingredients!)

1 onion, chopped into thick slices

1 lb ground beef

1 medium tomato, chopped

4 jalapeños, chopped into rings

1 red bell pepper, chopped

1 can of red kidney beans, drained and rinsed

1 680 ml can tomato sauce

1 packet of spicy taco seasoning

pinch of salt

pinch of red pepper flakes

1 tsp vegetable oil

1. In a large pot, heat the vegetable oil and saute the onions for a couple of minutes until they start to turn translucent. Next add in the ground beef and saute with the onions until the ground beef is browned and cooked through.

2. Once the beef is cooked through, add the tomato, jalapeños, bell pepper, kidney beans, pinch of salt and pinch of red pepper flakes. Mix everything together well and then prepare the taco seasoning as directed on the packet (typically you just mix the seasoning in some water) Then add all of the seasoning mixture into the pot, stir to combine everything well.

3. Finally, add the can of tomato sauce and bring to a boil. Taste the chili and add more salt or red pepper flakes based on your preference. Lower the heat and let simmer for 30-45 mins. Check back often and give it a little stir to make sure nothing is sticking to the bottom of the pot. Otherwise, you're basically done! Once it's done simmering, the chili con carne is ready to serve, devour & enjoy!!
